12 scallops, 1 clove garlic, zest of ½ lemon, 3 tbsp. chopped parsley, 50 g fat (lemon butter), salt and pepper, 1 egg, some breadcrumbs, grape seed oil for deep-frying, mixed seasonal salad. Crush the garlic and mix with the lemon and parsley into the fat; chill. Coat the scallops with the egg and breadcrumbs and deep-fry in the hot oil until crisp on the surface (approx. 3 min.). Melt the lemon butter in a pan.

Serve the salad with the scallops on top and pour the lemon butter over the scallops.

Indbagte kammuslinger med salat

12  kammuslinger, 1 fed hvidløg, reven skal af ½ citron, 3 spsk hk. persille, 50 g fedtstof (citronsmør), salt og peber, 1 æg, lidt rasp, vindruekerneolie til dybstegning, mix af årstidens salat.

Knus hvidløget og bland det med citron og persille ind i fedtstoffet, og det stilles koldt. Kammuslingerne vendes i æg og rasp og dybsteges i den opvarmede olie, til overfladen er sprød (ca. 3 min.). Citronsmøret smeltes i en gryde.

Anret salaten med kammuslingerne øverst og hæld citronsmørret over kammuslingerne.
